Whats for Dinner you ask ?










Well take a peek :D First I browned up 1lb of ground beef with diced half of an onion. Mixed in 1 can of tomato sauce, seasoned with garlic powder, salt, and pepper and put in a bowl for later.Then I sliced up some lettuce, tomatoes, and avocado, grated some cheese and put it all in the fridge for later when I fry up my taco shells YUMMY will post a few pics of my shells later tonight :D I hear your stomach growling hehe!!

Jordans First Lasagna



Jordan (my 16 yr old daughter) made her very first lasagna for hubbies birthday, she did a great job and it was delicious, here is the recipe

Lasagna

1 lb ground beef
2 6oz cans tomato paste
2 cans water (tomato paste cans)
1 C mushrooms
1 t garlic/crushed and chopped (I use 2 or 3 small cloves)
1 t salt
pepper to taste
3 C cottage cheese
10 oz pkg lasagna noodles cooked according to package directions
1 lb mozzerella cheese grated

brown your ground beef and drain, add in your garlic, salt, pepper, tomato paste, water and mushrooms, let it cook til it is all heated through. Scoop a little sauce in the bottom of your 13x9 inch pan so the noodles dont stick. Layer Noodles, hamburger mixture, cottage cheese,mozzerella cheese until pan is full, top with mozzerella cheese and cook at 375 for about 30 minutes YUMMM!
we usually double and make a HUGE batch

Easy Rigatoni Dish



brown up some ground beef, drain it and add a jar of spaghetti sauce. Then boil your pasta per package instructions, I layered a bit of sauce at the bottom of a 9x13 inch pan (just to coat the bottom so the pasta doesnt stick), then half my pasta, a layer of cottage cheese, some grated cheddar cheese, then more sauce, pasta, cottage cheese, sauce again then more cheese on top, cooked it at 350 for about 40 mins, tasted ALMOST like lasagna yum yum. the family loved it. I will make it again. Hubby took some for lunch today, next time I am going to try mozzerella cheese.

Banana Bars Oh MY!!!!


Delicious :D Moist and yummy. This recipe makes ALOT of frosting so you probably wont need to use it all, I like a pretty thin layer myself.


Frosted Banana Bars

2 cups sugar

1/2 cup margarine, softened

3 eggs

1 1/2 cups mashed very ripe bananas

1 tsp. vanilla

1 tsp baking soda

2 cups flour

Cream sugar, margarine and eggs. Add vanilla, baking soda then the bananas and flour. Pour into a greased 13 x 9 inch pan. Bake 350 degrees for 25-30 mins. Cool well then frost:

Frosting:

4 c. powdered sugar

8 oz. cream cheese, softened

1/2 cup margarine, softened

2 tsp. vanilla

These need to be chilled before serving and kept in the refrigerator but they won't last long.

Chocolate Chip Coconut Bars




Chocolate Chip Coconut Bars

2/3 C butter
1 C brown Sugar
1 C white Sugar
2 eggs
3 tbsp. water
1 tsp vanilla
2 C flour
2 1/2 tsp. baking powder
1/2 tsp salt
1 C coconut
1 pkg chocolate chips (2 cups)

Mix in order given, pour in a greased 9x13 inch pan. Bake for 25-30 mins at 350 degrees. Cut in bars while warm

Chocolate Chip Cookes



Moms Favorite Chocolate Chip Cookies

2 1/2 C flour
1 C brown sugar
1 C butter softened
1/2 C sugar
2 eggs
2 t vanilla
1 t salt
1 t baking soda
1-12 oz package chocolate chips (2 cups)
1 C walnuts (optional)
Preheat oven to 375 degrees into large bowl measure all ingredients except for the chips/nuts. Mix ingredients then stir in the choc.chips and nuts. Drop by rounded teaspoon full on ungreased cookie sheet. Bake for 10 to 12 minutes or til golden brown.

Cheddar Chicken Spaghetti



Cheddar Chicken Spaghetti

1 package (7 oz) spaghetti, broken
2 C cubed cooked chicken
2 C (8oz) shredded cheddar cheese, divided
1 can condensed cream of chicken soup, undiluted
1 C milk
1 T diced pimientos (optional)
1/4 t salt
1/4 t pepper

Cook spaghetti according to package instructions. Meanwhile in a bowl combine the chicken, 1 C cheese, soup, milk, pimientos if desired, salt and pepper. Drain spaghetti and add to the chicken mixture and toss to coat. Transfer to a greased 13x9 baking dish. Sprinkle with remaining cheese> Bake uncovered at 350 for 20-25 minutes or until heated through. YUMMMO

BBQ master (my hubbies) Ribs

Here they are marinating in half cider vinegar half water, salt/pepper, onion/garlic salt, and either hot sauce or hot pepper flakes.
Here they sit overnight in a cooler with ice.

looking a little tastier at this point lol, then hubby puts on bbq sauce at the end he DID salt/pepper/lawry's seasoning them before putting them on the smoker though you cant tell in the pic
DELICIOUS!! need I say more ?? we had corn on the cob and potato salad too ..yep, no wonder Im chunky lmao

Yummm Potato Salad


Its a holiday this weekend and Im hoping we will bbq, SO I made a nummy potato salad today..I cant wait to dig into it. I like to let it sit in the fridge overnight for the flavors to meld. Take a peek, i should have made some rolls too, maybe tomorrow

Chicken Enchiladas



I call these American Enchiladas because they arent hot or anything lol, they do have green chilis though, really yummy, here is the pic of before it was cooked and after. I made it early in the day before it got hot then just popped it in the oven at dinnertime. Hubby loves these.


Chicken Enchiladas

2 6oz cans chunk chicken (I had some precooked in the freezer)
1 10 3/4 oz Cream of Chicken Soup
1 16 oz tub Sour Cream
1 4 oz can mushrooms (drain)
1 4 oz can green chilis
1 2 1/4 oz can sliced olives
1 bunch green onions sliced (save some for top)
1 package (12) flour tortillas
grated cheese for the top (2 Cups)
garlic powder to taste

Mix all ingredients (except tortillas) in large bowl, fill flour tortillas (about 1/4 C per tortilla) with the filling, roll up and lay side by side in 9x13 casserole dish. Spread remaining filling over top of rolled tortillas, sprinkle with grated cheese on top (I use ALOT) and top with some green onions. Bake 350 degrees for 45 mins or until center is hot. YUMM
