Tex Mex Stuffed Burgers



omgooooosssshhhhh I have never had such a HUGE burger in all my life hehe..and SOOOO delicious, I love the taco seasoning used in the burger tastes SO good. And the cheese inside what can I say hehe, Im a cheese FREAK!! Check out The Baking Beauties Blog for this FABULOUS recipe, I made my patties WAY too big and could only eat half my burger ROTFL. Next time I am going to put some avocado slices on mine :D Yummm Yumm thanks ladies for the WONDERFUL recipe

This beautiful juicy burger is seasoned with taco seasoning, has cheddar cheese inside the burger (as well as on top) AND has a flavourful sauce that compliments it well! I hope you enjoy it! This one is for you, Carm! :)

Ingredients:
1 1/4 lb. lean ground beef
1 egg
3/4 a package taco seasoning (or to flavour)
1 cup bread crumbs
1/4 tsp. black pepper
1 Tbsp. dried minced onion (can use fresh if you have it on hand)
1/4 cup salsa
1/4 cup Miracle Whip
1 cup shredded cheddar cheese, divided (or tex mex blend, if you have)
5 hamburger buns
tomatoes & lettuce

Directions:
Combine ground beef, egg, taco seasoning, bread crumbs, pepper & onion. Mix & form 10 thin hamburger patties. Take 1/2 cup shredded cheese, and place in center of 5 of the hamburger patties. Now take the 5 patties without cheese, and place them over ones with cheese on them. Pinch around the outsides, sealing the cheese inside your burger. Place on medium heat on BBQ. Grill 15-20 minutes, or until cooked through, turning once. Before removing the burgers from the grill, sprinkle with the remaining 1/2 cup of shredded cheddar cheese, and allow to melt.

Mix the salsa & Miracle Whip.

Place burgers on the buns. Top with salsa mixture, lettuce & tomato slices.

Made my Rice Dish


K.. not too great lmbo kinda bland and needs WAY more CHEESE lol, ok Im a cheese freak lol, I think instead of the milk maybe I could have used cream of cheddar soup or even cream of mushroom YUMMO, just needs more flavor. Probably more spices hmmm what could I add, over all its pretty tasty just needs some touch ups

Cheese Rice and Broccoli

1 C minute rice
1 tsp. butter
1/4 tsp. Salt
1 1/2 C water
1 Bag (16 oz) frozen broccoli
1 C. Grated Cheddar
1/2 C. Milk

In a 1 1/2 to 2 quart microwave safe dish pour 1 C minute rice and butter, salt and water. Cover and cook for 3 minutes on high. Add broccoli and cover and cook 10 minutes or until broccoli is tender and water is absorbed completely.

Mix in cheese and milk. Microwave 5 minutes until bubbly. let set 2 minutes and serve.

Rice Challenge

Its Challenge Thursday :D I decided it would be fun to throw some challenges out at you on this day :D we will see how it goes. I decided on RICE for this challenge. Your challenge if you choose to accept it hehe..is to try a new rice dish .. I have a few that I make all the time like perfect microwave rice and spanish rice but I never try anything new with it SOOO that is my goal to do before next thursday. Will you take the challenge and post your rice and recipe on your blog?? I DOUBLE DOG DARE YA ROTFL


Here is a recipe that I use ALL the time..boring but if you havent tried it maybe it could be your challenge recipe?? Hmmm?


Sopa De Arroz (mexican rice)

1 C long grain rice
3 tablespoons oil
1/2 small onion finely chopped
1 clove garlic minced (I use more hehe)
3 ounces tomato sauce
2 Cups chicken stock
1 teaspoon salt

1. Saute the rice in the hot oil until golden but not brown.
2. Add the onion, garlic and cook slightly.
3. Add the boiling stock, salt, and tomato sauce. Return to boil then lower the heat, cover, and cook on low heat until rice is tender and the liquid has been absorbed. 22-25 minutes. Watch it close as the end comes near you dont want it to burn. I do end up adding a couple more splashes of water sometimes.

4. Fluff with fork and serve. Serves 4-6 you can also add little bits of cooked carrots or peas to this I well...I dont lol

The Dusty Hutch


HAHA maybe I should have named my blog that lol..here is my overly crowded and dusty hutch, My MAIN goal in my kitchen to get cleaned up.. notice the DUST, the candles that dont need to be on there, the MAIL that hubby has stacked up there GRRRR I have WAY too many jars there, too much stuff too much clutter. This is my before pic we will see how long it takes me to put up the new and improved After pic hehe

Banana Crumb Muffins


Ok made these tonight I had some bananas going bad and decided to try them..they are well OK hehe, they are fast and easy to make and the crumb topping is AWESOME I wish I could think of a way to make the muffin part moister. Hmmm I wonder if I can get my amish starter involved in here somewhere??? Any ideas?? Carm

Banana Crumb Muffins
For the Muffins:
1 1/2 C flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 C white sugar
1 egg lightly beaten
1/2 teaspoon cinnamon
1/3 C butter or margarine, melted

For the Topping:
1/3 C packed brown sugar
2 Tablespoons flour
1/8 teaspoon ground cinnamon
1 Tablespoon butter or margarine

Directions:
Preheat oven to 375 degrees. Lightly grease 10 muffin cups or line with muffin papers.

In a large bowl, mix together 1 1/2 C flour, baking soda, baking powder and salt. In another bowl beat together bananas, sugar, egg, cinnamon, and melted butter. Stir the banana mixture into the flour mixture just til moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 Tablespoons flour and cinnamon. Cut in 1 Tablespoon butter until mixture resembles course cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18-20 minutes or until a toothpick inserted in center of muffin comes out clean.

Whats for Dinner you ask ?










Well take a peek :D First I browned up 1lb of ground beef with diced half of an onion. Mixed in 1 can of tomato sauce, seasoned with garlic powder, salt, and pepper and put in a bowl for later.Then I sliced up some lettuce, tomatoes, and avocado, grated some cheese and put it all in the fridge for later when I fry up my taco shells YUMMY will post a few pics of my shells later tonight :D I hear your stomach growling hehe!!

How I made my Amish Friendship Starter

This is the recipe I used, I found it online I looked up several but this was the main recipe that kept showing up over and over.

In a non metal bowl mix 1 cup sugar 1 cup milk and 1 cup flour, mix with a non metal spoon to get the lumps out.

Pour mixture into a gallon size ziplock bag that is your day one

day 1. you just made your starter do nothing
day 2. Mush your bag
3. Mush bag
4. Mush bag
5. in a non metal bowl mix 1 cup sugar 1 cup milk and 1 cup of flour mix it well to get out lumps with a non metal spoon or whisk and then pour into your main bag this is called feeding your starter.
Day 6. mush bag
day 7. mush bag
day 8. mush bag
day 9.. yup you guessed it mush bag lol
day 10. Pour the entire contents of the bag into a non metal bowl. Add 1 C sugar, 1 C milk and 1 C flour.
Measure out 4 separate batters of 1 Cup each and place into 4 one gallon size ziplock bags. Keep one of the bags for yourself to keep yours going and with what is left in the bowl you can make a batch of amish cinnamon bread. Give the other 3 bags away to friends . Make sure to print out instructions for them. If its been a couple days make sure to let them know which day the bag is on so they can continue.

Amish Friendship Starter



Got a fabulous loaf of cinnamon bread from my friend Tammy in the mail omgosh it was SO delicious..moist and soft and cinnamony, I HAD to have the recipe BUT its made from a starter so since I dont know anyone that does it I have made my own, I cant wait til day 10 I will add a link to the recipe I used and you can follow along with me on how it goes, I cannot wait to make some bread WHOOHOOO..thank you Tammy :D your the best
