Banana Crumb Muffins


Ok made these tonight I had some bananas going bad and decided to try them..they are well OK hehe, they are fast and easy to make and the crumb topping is AWESOME I wish I could think of a way to make the muffin part moister. Hmmm I wonder if I can get my amish starter involved in here somewhere??? Any ideas?? Carm

Banana Crumb Muffins
For the Muffins:
1 1/2 C flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 C white sugar
1 egg lightly beaten
1/2 teaspoon cinnamon
1/3 C butter or margarine, melted

For the Topping:
1/3 C packed brown sugar
2 Tablespoons flour
1/8 teaspoon ground cinnamon
1 Tablespoon butter or margarine

Directions:
Preheat oven to 375 degrees. Lightly grease 10 muffin cups or line with muffin papers.

In a large bowl, mix together 1 1/2 C flour, baking soda, baking powder and salt. In another bowl beat together bananas, sugar, egg, cinnamon, and melted butter. Stir the banana mixture into the flour mixture just til moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 Tablespoons flour and cinnamon. Cut in 1 Tablespoon butter until mixture resembles course cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18-20 minutes or until a toothpick inserted in center of muffin comes out clean.

They look delicious, Carm! I have a tasty Banana Choc. Chip Muffin recipe that uses 1/2 cup sour cream. They are always nice and moist. Wonder if that might help???
